Tortellini of Valeggio

Tortellini of Valeggio
Generally speaking Tortellini can be described as very thin kneaded egg pasta filled with various meats (beef, pork, veal and chicken) and aromas. In Valeggio they have been producing a type of tortellini commonly called with the romantic name of “Love Knots”. The name refers to a legend set at the end of the 14th century, in which the nymph Silvia and Captain Malco left a yellow silk handkerchief knotted on the banks of the Mincio River as a token of their love after the clashes with the Visconti army. In broth or dry, tortellini are also quite easy to knot, or at least you can give it a go in a short cooking class.
